White Walker Cocktail

The latest season of Game of Thrones may be over, but that doesn’t mean you can’t break out this White Walker cocktail inspired by the show. Because White Walkers are scary, and it’s Halloween time.

This drink comes from Hemant Pathak at Junoon restaurant in NYC. Starting with a base of blended scotch and applejack, it’s got a lot going on–including citrus, spicy Ancho Reyes, silky egg white and an absinthe rinse, for good measure.

The scotch requires an infusion, which is actually pretty easy. And considering you’ll be infusing a whole bottle of Dewar’s, you’ll have plenty of scotch on hand for all your friends.

White Walker Cocktail

1 oz Dewar’s 12 Blended Scotch Whisky Infusion*
1 oz Applejack
0.5 oz fresh lemon juice
0.25 oz Ancho Reyes
0.25 oz simple syrup
0.75 oz egg white
1 dash absinthe

Rinse a coupe glass with absinthe, and discard the excess. Add all other ingredients to a shaker with ice, and shake. Strain into that coupe.

*Dewar’s Infusion

1 bottle Dewar’s 12
1 T rye, roughly ground
1 tsp mustard seed, roughly ground
5 g fresh turmeric, roughly chopped

Infuse all ingredients together for two hours, then strain through the cheese cloth.
