A Bombay Bellini is a mango flavored cocktail with refreshing bubbles from the champagne. The Bellini was invented in the 1940s by Giuseppe Cipriani at Harry’s Bar in Venice, Italy. Its unique pink color reminded Cipriani of the color of the toga of a saint in a painting by 15th-century Venetian artist Giovanni Bellini, so he named the drink the Bellini.
