About the Mezcal Negroni

The classic Negroni, with its recipe of equal parts gin, Campari, and sweet vermouth, is ripe for riffing. You can choose your favorite vermouth to add a dash of difference, or sub out Campari entirely for another bittersweet aperitif. Then there's the base spirit. Gin is a noble foundation for the Negroni, but swap it out for bourbon, rum, tequila, or mezcal... and you've still got yourself a fine cocktail.

This Mezcal Negroni from Vermont's The Copper Grouse proves that point nicely. The mezcal provides a smoky twist on the original cocktail, and its earthy undertones play nicely with the bracing Campari and rich, herbal vermouth.

And with just three ingredients, all mixed in equal proportions, the Mezcal Negroni is an easy drink to make at home.
