Remember the Maine
This classic first appeared in from The Gentleman’s Companion by Charles H. Baker, Jr., in 1939, and is something of a play on the Manhattan. Its name is a reference to the USS Maine, which kicked off the Spanish-American War after being sunk in the waters around Cuba in 1898.

Ingredients

2 oz rye
0.75 oz sweet vermouth
2 tsp Cherry Heering
Dash of absinthe
Cherry for garnish (optional)

Preparation: How to make a Remember the Maine

  1. Combine all ingredients in a mixing glass with ice.
  2. Stir until chilled, about 20-30 seconds.
  3. Strain into a chilled cocktail glass or into an Old-Fashioned glass with ice.
  4. Garnish with the cherry.
