The Great Calabaza is a delicious Thanksgiving riff on the Margarita from Autumn Giles (perhaps the most appropriate name in history) at Serious Eats. You can use this pumpkin butter recipe, or simply buy some at the store. The five-spice salt rim is optional, but it goes great with the citrus and really adds to the presentation as well.
|For the Five Spice Salt:|
|1 teaspoon five spice powder|
|2 tablespoons kosher salt|
|For the Cocktail:|
|1.5 oz mezcal joven, such as Sombra|
|1.5 oz freshly squeezed orange juice|
|2 tablespoons pumpkin butter|
|0.25 oz lime juice|
Preparation: How to make The Great Calabaza
- For the Five Spice Salt: Mix together five spice powder and salt. Store in a small jar until ready to use.
- For the Cocktail: Moisten the rim of a rock glass with lime juice, rim with five spice salt, and set aside. Fill a cocktail shaker with ice. Add the mezcal, orange juice, pumpkin butter, and lime juice. Shake until well-chilled, about 20 seconds. Add fresh ice to prepared glass and strain cocktail into glass.
