As with every season, the beginning of spring means the beginning of a whole new category of cocktails. But unlike fall and winter, there’s a certain optimism that permeates spring cocktail recipes—rather than hunkering down for a few months, we’re coming out of our respective cocoons and getting ready to greet the long, warm days of summer.

This collection of springtime drinks has everything from old classics, like the Pimm’s Cup and Clover Club, to new favorites from some of the best bars and bartenders out there. And most of the recipes feature fresh fruits, vegetables, or berries, which will help to thaw out your palate as much as your soul.

There’s nothing quite like sitting on the porch with a nice, refreshing cocktail as you watch the weather gradually improve, and these puppies should certainly scratch that itch. So whether or not the climate is cooperative, get mixing and celebrate the new season with a toast.

  • Pimm's No. 1, 7-Up, Cucumber, Lemon peel
    The Pimm's Cup is a British classic that's great for summer afternoons and brunches with friends. It's light on alcohol (using only Pimm's No. 1 as a base spirit, coming in at 50 proof) but fresh and delicious, and like a Bloody Mary you can add nearly any fresh fruits and vegetables you want to make it your own.

    The Gin Fizz is a classic, and we'd be terrible bartenders if we weren't constantly trying to mess with classics. Rose water and strawberries make this variation pink, fruity, and beautiful (as well as absolutely delicious).

    Despite it’s name, El Diablo is a perfect cocktail to help you beat the heat this summer. The sweetness of crème de cassis combines perfectly with the tartness of ginger beer, and the intense smokiness of mezcal. These cocktails are especially good for summer get-togethers where exact measurements aren’t your top priority!
