Seven Fathoms Rum hails from the Cayman Islands where it's produced by the Cayman Spirits Company. The rum pays homage to the practice of shipping rum across the ocean, which—due to rolling ocean waves—imparted a depth and richness to the rum as it interacted with the barrels.After distillation, Seven Fathoms Rum is aged underwater off the Cayman coast at a depth of seven fathoms—or 42 feet for the less nautically-inclined—for up to three years. Ocean currents rock the barrels, creating more liquid-to-wood contact. All that leads to a rum that's full of caramel, vanilla, butterscotch, and oak spice, plus a hint of salty sea.
