Elijah Craig Barrel Proof is an unfiltered, Kentucky straight bourbon whiskey that is aged for 12 years. It has been released thrice annually since 2013.Elijah Craig bourbons begin with local grains—corn, malted barley, rye, and wheat. The grains are cooked with Kentucky limestone water, and converted to a mash which is then fermented and distilled in copper pot stills.Barrel Proof, like other bourbons in the Elijah Craig line, are aged in new oak barrels that have been freshly charred. Unlike other bourbons, however, Barrel Proof is bottled straight from the bottle—uncut, non-filtered, and full barrel proof.The resulting, deep amber whiskey has a nose of caramel, fruit, and toasted oak, and flavors of vanilla, butterscotch, and baking spice. Given that Barrel Proof is bottled straight from the barrel, the proof varies from batch to batch—from 127 to 142 proof.Elijah Craig Barrel Proof has twice been awarded a Double Gold Medal from the San Francisco World Spirits Competition, and received a rating of 95 points at the Ultimate Spirits Challenge.
