  1. Single-celled microorganisms that belong to the fungus kingdom. In the production of beer, wine, and distilled spirits, yeasts (most commonly of the species Saccharomyces cerevisiae and Saccharomyces pastorianus) are used to ferment sugars into alcohol. Different species of yeast tend to produce different flavors in the final fermentation product.
