This month’s Mixology Monday focuses on morning drinks, the kind of boozy beverages that jumpstart your day and pair nicely with breakfast. I created a tasty libation, dubbed Dad’s Juice Box, that pairs fresh orange juice with egg whites for a nutrient-packed beginning. From there, I add genever, St. Germain, sugar and absinthe, because I’ve yet to find a better way to start your day than with absinthe.

For the orange component, I opted for Clementines. They’re seedless and sweet and their peels give off very aromatic oils when muddled. So rather than squeeze the fruit, I muddled a handful of Clementine wedges to extract the juice and oils.

The result is a drink that’s bright and fresh, with a pleasantly creamy texture formed from the mixture of fresh juice, egg whites and powdered sugar. The St Germain adds a floral sweetness, while the absinthe keeps everything in check with its strong herbal backbone.

Mix one of these up for breakfast or brunch, and your day’s heading in the right direction.

Dad’s Juice Box

1.5 oz Bols Genever
.5 oz St Germain
1 teaspoon powdered sugar
1 egg white
1 barspoon absinthe
1.5 Clementines, quartered

Muddle Clementines to extract juice and oils. Add remaining ingredients, and shake vigorously without ice to emulsify the egg. Then add ice and shake until cold. Fine strain into a cocktail glass.
