Enter Wyoming’s Backwards Distilling, which has released a limited Eclipse Edition of its 307 Vodka. This is a enterprising rebrand, but the same juice as the regular 307 Vodka. It’s made with Rocky Mountain spring water, as well as corn and beet sugar harvested in the Equality State.
The nose gives off whiffs of toasted grains and bright, lemony citrus. It proves to be soft, light and initially cool on the palate, with a light sweetness and a faint melon flavor. Those flavors get sweeter and slightly heavier, turning to caramel and butterscotch. Just as the sweetness reaches its peak, a sudden spice burst emerges. Its peppery finish is long, lingering and bone-dry.
307 Vodka is an excellent sipping vodka, and should have a significantly longer shelf life than its namesake.
