Having a friend in Western Australia has its perks. Because even though it’s on the opposite side of the world (from Cocktail Enthusiast HQ), such a locale can bring access to spirits that would otherwise stay off our radar. Spirits like those made by the Great Southern Distillery Co. In this case, Limeburners Single Malt Port Cask Whisky, the subject of this review, and a collection of other whiskeys ranging in proof, finish and style.

Limeburners Single Malt Port Cask Whisky is distilled in copper pot stills from local barley. It’s matured in second-fill bourbon barrels, finished in old port casks and bottled without an age statement. The whisky pours gold in the glass, and on the nose, you’ll find aromas of dark fruits, spices, vanilla and barley. Take a sip, and leading notes of sweet malts stand alongside orange citrus and caramel. From there, the sweetness is tempered and the flavors expand to include toasted barley, honey, cinnamon and more fruits thanks to that port finish–namely raisins, plums and figs–alongside lighter notes of pear. It finishes very long and semi-sweet, with more fruit and spice.

Limeburners Single Malt is a keeper. The port cask brings plenty to the table, and while things are sweet and very fruit-forward, the moderate oak and spice keep things in check for a good drink from open to close.

    Having drank many of the award winning Tasmanian whiskeys, I was a bit skeptical of a West Australian being able to compete. But I was certainly surprised. Probably my favourite spirit out of Australia yet.
