February 22 marks National Margarita Day. And while we never need an excuse to drink margaritas, we’re also not going to turn one down. That leads us to the margarita recipes below. They creatively stray from the classic three-part recipe of tequila, Cointreau and lime, but any (or all) would be a fine choice for celebrating National Margarita Day. So let’s all do so accordingly and then feel good about our tequila-fueled productivity.
WINTER IN JALISCO

1.5 oz Patrón Silver
.75 oz Patrón XO Cafe
.5 oz Patrón Citrónge Orange
.75 oz Fresh Lemon Juice
1 barspoon Toasted Sesame Oil
Combine all ingredients in a cocktail shaker and shake with ice to chill. Strain over fresh ice into a double old fashioned glass. Garnish with a slice of fresh kumquat.
1.5 oz Avion Silver Tequila
.5 oz POM Wonderful Pomegranate Concentrate
.5 oz Fresh Lime Juice
.5 oz Fresh Lemon Juice
.5 oz Simple Syrup
Shake and strain over crushed ice in a rocks glass that is half rimmed with sale de gusano. Top with 5-7 pomegranate seeds.
ROSA PICANTE

2 oz Patrón Silver
.75 oz Fresh Lime Juice
.5 oz Simple Syrup
.5 oz Ginger Syrup
1/2 Barspoon Jalapeño Oil (or a Fresh Jalapeño Slice)
1 Dash Rose Water
Combine all ingredients in a cocktail shaker and shake with ice to chill. Strain into a chilled cocktail coupe that has been half-rimmed with rose sea salt, and top with a dash of rose water. Garnish with a rose petal.
