The highball is an easy-to-make, refreshing cocktail that’s comprised of a spirit and nonalcoholic mixer like soda or ginger ale. In this case, we’ve got the Arrandas Highball, a more interesting than usual variation that’s starting with Olmeca Altos tequila and club soda, and then doctoring that pairing with a couple of aperitifs and fresh ginger juice. It’s light and floral with a ginger bite, so make one (or three) and adjourn to your nearest patio.
1 oz Olmeca Altos Blanco Tequila
1 oz Lillet Blanc
.5 oz Suze
.25 oz fresh pressed ginger juice
Rim a tall highball or Collins glass with kosher salt. Build all ingredients in the glass with ice and top with club soda. Garnish with a long thin slice of fresh ginger and a lime wheel.
