Ten to One Oloroso Sherry Cask Finish Caribbean Dark Rum: in this case, the name says it all. It’s the first release from the label’s cask series, which sees Ten to One’s dark rum—made with a blend of rums sourced from Jamaica, the Dominican Republic, Barbados, and Trinidad—finished in Oloroso sherry casks.
A rich, dark, and figgy sherry is prominent on the nose, but it doesn’t outshine the tropical aromas of green banana and juicy fruits. It starts with a lush, silky texture and flavors of anise, almond, and biscuit, which blend together to suggest a box of Italian Christmas cookies. The texture of the spirit grows lush in the center as notes of bananas and tropical fruit takeover.
Its presence on the palate thickens towards the back, where we start to see those rich, sherried notes recalling figs and marzipan coupled to a woody cedar note that gives structure. The finish introduces a touch of baking spice, but mostly marinates in that rich sherry sweetness.
As interesting and delightful as I found Ten to One Oloroso Sherry Cask Finish to be in the glass, I was curious to see how it would play in a Daiquiri. As it turns out, it makes for a richer, darker, and all around more spirited version of the classic cocktail, which in turn amplifies the sweet, marzipan nuttiness found in the rum. It ultimately makes for a sweet and nutty Daiquiri, which should be ample reason enough to make room for it in your home bar.
