Here we’ve got a refreshing rum cocktail from Tommy Bahama Restaurant & Bar. They’re merging a 12 year rum with three classic tenants of island drinks–lime, ginger and bitters–plus some maple syrup for a rich sweetener. It looks good, tastes good and goes down easy. Drink one this spring and you’ll feel like it’s summer.
RUM BABALU
2 oz Kirk and Sweeney 12 Year Rum
.75 oz fresh lime juice
.5 oz maple syrup
1 oz ginger beer
1 dash Angostura bitters
Add all ingredients into a shaker except the ginger beer. Add ice and shake, then strain over fresh ice into a double rocks glass. Top with ginger beer and garnish with an orange peel.
