Tipperary Watershed is a single malt whiskey from Ireland’s Tipperary Distillery. It’s aged in first-fill bourbon casks and cut to a respectable 94 proof with water from a neighboring farm. The whiskey is remarkably faint gold in color, one of the lightest I’ve ever poured.
The nose features sweet raspberry, apricot, and vanilla custard. It is light in body and medium in temperature, and starts with bright fruit flavors that run the gamut from raspberry to peach to tart green apple that borders on sour. Those fruit flavors are tamped down at the end by the emergence of raisin, which gives way to vanilla custard and biscuit and finally a gentle spice note that arrives with a touch of oak. Delicate black pepper closes the show, which endures for a satisfyingly long and subtle finish.
The light character and fruity brightness of Tipperary Watershed make it a refreshingly original whiskey, and the gentle spice conclusion provides plenty to chew over. Lovers of lighter Irish whiskeys will find plenty to like, and any brown spirit aficionado will find something to enjoy in its fresh composition of flavors.
